Teriyaki Sauce (my version) & Glazed Chicken Wings

It was 10:00 AM Dec 31st 2011, was sipping some excellent coffee that was bought from a local roaster in Coorg(India). Did not have any plans for new years eve and did not want to go out as the weather forecast was not the best for a night out.

So, I though maybe having some of our friends over for the evening. Dialed my buddies and found out that they did not have any plans either so we decide to meet at my place for the evening.

Whipped up a quick menu for the evening, from this menu I want to share with you my version of the Teriyaki Sauce for glazing Chicken wings that I like to serve along with drinks.

So here you go

Teriyaki Sauce


I use this sauce for my chicken wings its savory, mildly spicy, has a sweetness and hints of bitter taste from the Orange Zest, by the way traditionally a teriyaki sauce uses Mirin since I did not have it I left it out.

Ingredients :

1/2 cup  dark Soy Sauce

1/2 cup  Water

1 tbsp  minced fresh garlic

1 tbsp  minced fresh ginger

1/4 cup  spring onions

1 tsp  finely chopped green chilies (with out the seeds)

1/2 tsp chile flakes (or cayenne pepper)

2 tbsp  honey

1 tbsp  Strawberry preserve

1 tsp  Orange zest

1 tbsp  cornflour

1 tsp  vegetable oil

Directions for the Sauce:
  1. In a hot sauce pan add oil and let it smoke mildly
  2. Add garlic and Chili flakes and let brown (very light you should only see the edges light golden brown)
  3. Add Green Chilies, Onions & Ginger and saute till onions are translucent
  4. Add soy sauce
  5. lower heat and bring to a rolling boil (taste and you should be able to get mild flavors of the ingredients added so far)
  6. Add table spoon of Strawberry preserve and stir with a small wire whisk until it dissolved and than add the honey and let it blend into the sauce
  7. Now add orange zest and let cook for a few seconds
  8. Mix the 1/4 cup of water and cornflour and add to pan, cook until sauce thickens. towards the end add the spring onions

Chicken Wings

Description :

I either deep fry or steam and bake the chicken wings and than coat with the above


2.2 pounds chicken wings

1 cup all purpose flour

1/2 tsp salt

1/2 tsp pepper

1/2 tsp cayenne pepper

1 tsp steak seasoning

2-3 tbsp hot sauce

  1. To the chicken wings add the hot sauce and the Stake Seasoning, let it marinate for a couple of hours or longer
  2. Add the remaining ingredients to the flour
  3. Heat enough oil to 325 F
  4. Coat the chicken wings with the flour mix and drop into the hot oil cook for until the chicken is cooked (golden brown)
  5. In a wide pan add the Teriyaki Sauce until you see small bubbles now add the wings and let them coat well
  6. Garnish with green onions and serve

  7. Alternately you can just dip the wings in the above sauce
