Rotesserie Chicken Rub


1 ½ – tablespoon salt
1      – tablespoon sugar
1      – teaspoon ground black pepper
1 ½ – teaspoon cayenne pepper (adjust to your taste, this will give a medium amount of heat)
1      – tablespoon paprika
1      – teaspoon dried thyme
½    – teaspoon ground ginger
1      – teaspoon Chinese five spice
1 ½ – teaspoon garlic powder

Chinese five spice
2   – teaspoons of Szechuan peppercorns, roasted & ground
8   – star anise, ground
½ – teaspoon ground cloves
1   – tablespoon ground cinnamon
1   – tablespoon ground fennel seeds
